Basilicata Pork Loin


Ingredients
Pork loin or pork tenderloin
salt and pepper
Basilicata

Preparation
Basilicata Pork Loin (Whole pork loin or pork tenderloin) lightly season meat with salt & pepper on each side of pork loin.
Place meat into large sealable food-safe bag.
Pour enough Basilicata inside of bag so outside of meat is lightly coated (3-4 oz).
Press as much air out of bag as possible, close bag, lightly massage sauce around meat & refrigerate for 4 hours minimum (overnight best).
After marinating period, place meat & marinade from bag (discard bag) in a baking dish or pan & bake at 325 (convection) or 350 (regular oven) to proper food safe temperature or until a thermometer reads a minimum of 160 in the center of the meat for 15 seconds.
For extra flavor deglaze pan by pouring 16 oz white wine or water into pan about ¾ into cooking meat.
Use strained gravy over meat for serving.
Meat may also be grilled or put on rotisserie and smoking compliments Basilicata flavor as well.
