Basilicata Pasta Salad
Ingredients
12 oz Farfalle, Rigatoni, filled Tortellini or favorite pasta
4 tbsp. of oil (olive or canola)
1 cup diced multi-colored sweet peppers
½ cup Parmesan cheese
1 small can of sliced black olives (drained)
½ cup sliced green olives (optional)
Fresh cracked black pepper (to taste)
4-6oz Basilicata gourmet salad dressing & sauce (shaken well)
Preparation
Boil pasta AND DRAIN THOUROUGHLY.
While still in colander, pour oil onto pasta, mix until pasta is evenly coated and place in bowl, cover with plastic wrap and refrigerate until cool.
After pasta is cooled, add additional ingredients, toss and return to refrigerator covered.
Let marinate for one hour in refrigerator and then enjoy!
